Grades of Maple Syrup

We carry four grades of 100% Pure Maple Syrup. It's commonly thought that these grades refer to the quality of the syrup or how it's boiled. That's not the case here. All of our grades are crafted with the same care, are 100% pure and equally nutrient rich. The weather at time of sap collection affects the nature of the sap, producing the syrups' four distinct flavours.

Visit us in the Sweet Shop at the Farm and let your tastebuds pick their favourite with a free sampling of each grade or, if you can't visit the farm, here's what you need to know to pick the best fit for you:

GOLDEN - Delicate Taste

A delicate, sweet and buttery, syrup with gentle maple undertones and clear gold in colour. We use our light syrup to make our maple sugar candies. It is also often loved on yogurt, or drizzled over desserts like ice cream. 

AMBER - Rich Taste

Our most popular syrup, we've served the Amber in our Pancake House and recommend this grade for anyone purchasing syrup as a gift due to its familiar, distinct maple flavour and colour. We've found when most people think pure maple syrup over pancakes or waffles, they're thinking of Amber. 

DARK - Robust Taste

This versatile syrup is dark amber in colour and holds a robust maple flavour. A great choice to pour over pancakes for anyone wanting more maple body, Dark also holds its flavour well when used in oven-dishes like squash, as a meat marinade, baked into pastries, or drizzled over desserts. 

VERY DARK - Strong Taste

Almost black in colour with a bold maple flavour, this syrup is often considered too heavy over pancakes, but ideal as a glaze for cooked meats, a marinade, or to add a maple boost to baked dishes. Its dominant flavour holds strong when pent with other ingredents. Try Very Dark as a flavourful substitute for sugar in any recipe. 

 

Which Grade is the Sweetest?

All grades of 100% Pure Maple Syrup share the same sugar content. If they didn't, they wouldn't be 100% pure. However, your tastebuds may decide one tastes sweeter than another. While most of our visitors tell us they find Light tastes the sweetest, we've also been told many times that the darker syrups taste sweeter. Let your own tastebuds be the judge and sample the grades in our Sweet Shop on the Farm. If ordering online, don't worry. All our grades share the sweet signature goodness of 100% Pure Maple Syrup and if you tasted them you'd probably only suspect a slight variance in sweetness with all having enough sweetness to satisfy your expectations. Select your syrup instead on the degree of maple flavour you desire in your 100% Pure Maple Syrup.

Why am I not familiar with these names?

In January of 2016 Ontario changed what each grade (colour class) is called with the adoption of the international maple syrup grading system.  If you have purchased maple syrup from us in the past and know which grade you prefered, refer to the table below to find your match.
